Boy, with this snack you can boost your energy and help yourself out, when you don’t have any time to eat before or after a workout. Jana, our awesome-sauce Life Junkie Food Nutritionist and Expert created it and tested it out often (I was one of the lucky few bitches to be her testing bunny, yay!)
I personally love to eat these balls at conventions and events, when I have many classes and not enough time (or possibility) to eat inbetween.
They are made SO quick and easy (check the video) – believe me: if I can make them, so can you!
And the best: you can make them once a week and keep them in the refrigerator for a full week.
Here is the recipe. It’s a starting point – you can change the ingredients easily: instead of cranberries or coconut chips you can also add dark chocolate bites or raisins… you will find your own perfect match. Just make sure to use high quality ingredients – yes it’s more pricey, but perhaps only in the short-term. In the long-term, it’s very well invested money and you will feel the difference fast. Nourish yourself like a queen – you are not a garbage can, all right?
And here we go:
Peanut Butter Power Balls!
Ingredients
1 coffee cup oatmeal
1 handful dried cranberries
6 tablespoon Nut butter (Peanut, Almond, Cashew, whatever you like best)
1 handful coconut chips
1 teaspoon vanilla
2 tablespoons water (or more)
Method

Or short and easy:
- Mix everything together to FORM a dough.
- Put DOUGH into the refrigerator for around 30 minutes.
- Form little balls and put them in an airtight box. PLACE back in the refrigerator for another 30 minutes.
You can STORE them in the refrigerator FOR up to one week (but you might eat them faster anyway).
